The first small batch of finished product. Apricots have to be done in small batches.

      4 pounds of fresh apricots washed and split in half and then half again.
      2 cups sugar. Pour half the sugar over the apricots and wait for 2 hours.
      1/2 cup water
      1/4 cup freshly squeezed lemon juice.

      Cook in a pot that isnt aluminum, preferably something like an enameled pot, over med heat for 1 to 2 hours. If it begins to foam ad a really small pat of unsalted butter.

      You have to sterilize the jars before putting the preserves in them, seal them, and then boil them again for 10 minutes or so.

      Your preserves will yield 4 pints of preserves and probably 2 half pints.

      To be clear about the sugar part, most recipes call for 7 cups of sugar per batch. Yikes!
